This is the last week of work/school for us. What a relief. The kids have drained me this year. That and all the catering and dealing with The Jerkwad. This week, all I have planned are FINALS. And my finals are 100 questions and I've planned for the classes to take them over the course of two to three days. If there's time available, the kids can watch movies or bring in food for a pseudo party.
I'm really looking forward to having time to spend with Ivy - during the week it's pick her up, feed her, bathe her and send her to bed. I don't get much play-time with her and I'm so excited that I'll be able to now. Problem is, I don't know what to do with Ivy during the summer though. She's only 18 months. Area activities are designed for 3+ crowd, expensive and not entirely local. Sure there are a lot of things we can do at home but... we don't have a backyard for all those backyard activities the internet suggests and... CABIN FEVER.
But I know I do have plans for meals. What a segue, huh?

Monday - BBQ! Sure, we've been using the grill for a few weeks, but still, it's the BBQ holiday that kickstarts the summer. Peak grilling season. Anyway... BBQ sausages and chicken, grilled corn on the cobb and maybe mac and cheese.

I'm a bit peeved that I've got students requesting my friendship on facebook. There goes my anonymity. No, I don't intent to return their request until they have graduated. They're on their way out anyway. But still... they will still be in connection with people who are still students and there's that can of worms. Do not want.
I'd like to just shut all the windows and doors and just not come out for a while.
While I do that, enjoy this week's menu!

Bittersweet Chocolate Chip Cookie
This has quickly become one of the top contenders of my favorite cookie list (peanut butter cookies, crinkle cookies, snickerdoodles).
I don't know the original source - my husband found it. But I'll try.
Bittersweet Chocolate Chip Cookie
½ C cocoa powder
4 tsp. sugar
8 tablespoons unsalted butter
2/3 cup + 2 Tbsp unbleached white flour
1/2 teaspoon baking powder
Heaping 1/2 teaspoon salt
2 large eggs
3/4 cup packed light brown sugar
1 teaspoon vanilla extract
12 ounces bittersweet chocolate, chopped into chip-sized pieces
Preheat oven to 350. Line a baking sheet with parchment, set aside.
In a heat-proof bowl placed over a pot of simmering water, melt the 4 ounces of chopped chocolate, cocoa powder, 4 tsp of sugar, and butter, stirring occasionally.
Meanwhile, combine flour, baking powder and salt in a small bowl and set aside.
In the bowl of a stand mixer fitted with the whisk attachment, beat the eggs and sugar on high until pale and thick, about 3 minutes. Turn mixer to low and add melted chocolate in a thin stream until combined.
Add flour mixture and stir until just combined. Using a rubber spatula, fold in chocolate chunks.
Drop heaping tablespoons of batter on prepared cookie sheet, 2-3 inches apart. Bake for 12-14 minutes, until cookies are dry and cracked but still soft in the center. Cool on baking sheet for 10 minutes, then transfer on parchment to cooling rack. Repeat with remaining batter. If you want your cookies to be the most attractive, spoon all of the batter out while it is still warm. As it cools it will harden, resulting in a slightly thicker cookie with a little less of a crust.

Mother's Day and a Menu
Free breakfast at one of my favorite places: Chiloso.
Stopped by Target and PetSmart.
Put Ivy down for a nap and then put myself down for a nap.
Got to work on some ... work. Ugh. Lesson plans, FCCLA display board and grocery shopping for catering tomorrow.
Once back home, I made hot wings!
And now, Ryan is making some awesome chocolate cookies. Possible recipe later.Yesterday, we went to Dallas (which we were going to do today instead but changed it around because of my work junk).
Ryan took me to Twisted Root for lunch and we stopped by Central Market too.

Weight loss
Well, the weight loss challenge at work is over.
Beginning weight, 127.5 (shut up, that's heavy for 4'10"). I don't remember the beginning date.
Final weigh in, 119.
Total loss of 8.5 pounds in a, what, 8 week period. Not as much as I would've liked to have lost, but it's pretty good!
And to make this even sweeter, I won the pot! A whole 83 whopping dollars in my pocket! Several people just stopped checking in or gave up. Ryan and I kept at it.
So, I took my money to the cafeteria and paid off my lunch tab. The leftover money will go towards savings for a house. It isn't much, but it certainly helps!

Crock-Pot Chicken Parmesan
I'm looking forward to trying this recipe I found here. It looks easy and yummy.
Crock Pot Chicken Parmesan
3-5 boneless, skinless chicken breasts
1/2 c Italian seasoned bread crumbs
1/2 c grated Parmesan cheese
1/4 tsp black pepper
1/4 tsp kosher salt
1 Tbsp olive oil
1 egg beaten
4-6 mozzarella cheese slices or more
1 jar marinara/spaghetti sauce
Drizzle 1 tbsp olive oil all over bottom of your crockpot. Beat egg and pour into medium bowl. In another bowl mix bread crumbs, spices and grated cheese all together and set aside. Now dip each chicken breast into egg and then dredge in your breadcrumb mix - coat all sides. Place coated chicken on bottom of crockpot. Add sliced mozzarella to top of chicken and pour your jar of spaghetti sauce over everything. Cover and cook on LOW for 6-7 hours and that's it.

We are planning on buying a house. In order to help with costs and saving money, I'm planning weekly menus and STICKING TO IT. I do this all the time... Say I'm going to do menus and then let it slide. But this time, I need to get serious. Plus, summer vacation is right around the corner and it'll be so much easier to do this.
This week, there are a lot of things going on at school/work for us. Thankfully, I'm not catering at night this week. I have a thousand cookies the kids need to make and blueberry muffins - but that's easy.
Sunday - Fried chicken and potato salad; I use canola oil to fry because it's healthier.
Monday - Leftovers
Tuesday - Hamburgers and chips
Wednesday - Pizza
Thursday - Leftovers
Friday - Hot links on bread and chips; This is a throw-back to my hometown. Organizations regularly have hot link sales on street corners and you're hard-pressed to find an empty street corner during the summer.
Saturday - Steak, twice-baked potatoes; These are both freezer fixers because they are premadend wrapped (well, the steak isn't cooked). So there isn't much prep involved with these.

Aint gonna lie...
I may have had just a little bit too much vodka tonight. Don't care. Haven't had any since.... February maybe? Don't know.
There's so much garbage going down it isn't funny. My eyes are starting to cross. I need to cut my fingernails. They're too long for my taste.
I'm totally loving my hair. The cosmetology (typed slowly) students - one in particular - has been doing my hair. Curling with a straight iron. I wish I could replicate. Cutting it - looks good. And the teacher cutting my bangs... Still long. Still looking fly. I LOVE MY HAIR (when I actually fix it). I haven't really messed with my hair (cutting and whatnot) since before Ivy was born. That'd be October '09. Next up... dying my hair. We'll see what happens. Psht. It's just hair.
Catering on Monday. I'm feeling all MEH about it.

Speech!
Had a small assembly at school for the girls about beauty and confidence.
It could've gone better. Next time, we'll know. Now, I don't have a great stage presence and I got so nervous that I skipped over information and almost cried at the end. But the reception I was given was that I was a "better" speaker than the counselor. We had 20 minutes to do our thing and I had 3 other people who wanted to talk, and the counselor just kept going on about nothing and monopolized it. Next year, it'll be better.

Mardi Gras is Tuesady... uh, duh.
I come from a land that is very close to Louisiana - in location and culture. Moving pulled us away from that and I aim to teach about Mardi Gras to my foods classes. I always strive to teach about food relating to holiday traditions. Second to Thanksgiving, Mardi Gras is a big food holiday telling celebrators to fatten up for the Lent season. Now, I'm not a religious person but there was research to be done. And boy did I - mostly to pack in as much information as possible int my students' brains. I also went beyond Mardi Gras to Lent and Easter. Getting ready for the egg holiday!!!
They're (my students) making jambalaya and king cake tomorrow. Yes, on a Monday - the powers that be snaked Fat Tuesday away from me for more important business - state standardized test benchmarking... "practice and placement" for the real thing, come April. I'll be making it on Tuesday. Am I doing it to Fatten Up? Hell no. I like connecting to my roots through food. Come spring break, I'll be doing a bit more of that. Sensible portion sizes, of course.

2 pounds down?
I haven't really been trying with the fitness stuff until recently. There's a fitness challenge at work. The person who loses the most percentage of body weight wins money. People who gain, add a dollar per pound to the winning pot. Good news is that I've fluctuated between maintaining and dropping. Ideally, I'd like to lose 20 pounds. People who know me ask where that 20 is. I hide it well. Baggy clothes and hoodies do the trick I'm tellin' ya. Then they complain that I'm so little. Here's the catch... I am stupid-short and am too bootyliscious for my height. Then it boils down to feeling better.
We've gotten some workout dvds and have been doing pretty good with working out. I've decided to step it up though. Workout every night. Or at least try to. I walk/jogged about 2 miles around my apartment complex tonight. Then we're doing P90X carb fitness video.
I don't drink sodas much anymore. I need to quit the Koolaid thought. That'd help for sure. I know it would help out even more if I added fruit to my diet. And vegetables. Okay. Fine. It'd help if I added protein too. Yes, I'm a carb whore.
Here's to TWO POUNDS DOWN!

Menu Planning
Husband and I signed up for a fitness contest at work. The person who loses the highest percentage of body weight wins the money (sign up money and 1$ per pound for each person who gains weight). This has been a motivator for both of us to get more active.
I made fried catfish last night. I love to fry foods. It's such a rare occasion and a nice treat. And honestly, I'm good at frying stuff. It was Ivy's first taste of fish and of course didn't like it at first. But she finished her meal. We're trying to have her eat table food but we eat later than she does and what we have is usually not something you'd feed a toddler. And we don't purchase foods that a toddler would normally eat.
The status of our bank account has given me more motivation to reign it in when it comes to eating out. This past week has been so hectic. Food was the last thing on my mind.
This week... some changes.
Here is my Menu Plan Monday. Totally don't want to plan what goes where. Just that we know these are our options.
1. Sandwiches - Been watching a lot of the Cosby Show and Doc Hux eats a lot of hoagies. Was inspired.
2. Hot links - on bread with chips
3. Pizza
4. Chicken - apparently we aren't being specific with how we're making it; but I want to do something with the crock pot.

Carrying Weight
And I'm not talking about the accumulated mass of my stomach, hips, thighs and buttocks. I'm not talking about carrying Ivy either. I'm talking about more of a mental burden - which is also physical. I have been looking around my home and there is ... stuff ... everywhere.
Things I'm forced to keep due to sentimental value.
Things I'm forced to keep because it's a little piece of information that needs to be kept or filed or shared or whatever.
Things I'm forced to keep because, well, what if I need it.
Things I'm forced to keep because I can't say no. And when I do, my 'no' doesn't get heard or validated.
And living in such a confined space, it gets cramped and cluttered pretty quickly. I've come to realize that maybe all this clutter is keeping me from doing what I need to do. It may seem like I'm placing the blame - but I'm not. It is entirely my fault. It's something that I have to deal with. But when I go to clean up, I get overwhelmed. The task is too daunting. The things evoke memories or plans for their use. I tried this today. There's a box under my bed that has things I don't really need and all I could do was look through the stupid thing and put it back.

Boo. I've been busy.
Last week's menu was a bit sketchy. Since we made two large crock pot meals, we were stuck eating leftovers the whole week. Glad it's gone!
So here is this week's late menu - Jan 17.
Monday: Fend for yourself. Catered this night. I had Chicken Parmesan.
Tuesday: Lack of planning = no dinner

Ten Reasons
I'd like to lose the baby weight. I'm inspired by another blog, saw this and want to emulate it.
1. I want to feel healthy. Which I currently, obviously, do not.
2. I used to have a lot of energy. I'm tired all the time now. If given the chance, I'd probably sleep for 24 hours straight.
3. Being healthy benefits me psychologically. Not only did I have energy when I was working out, I was happy.
4. Body aches suck. I know that these aches and pains I'm now dealing with is because I'm not active and not eating right.
5. Confidence in myself has plummeted. Not just my confidence with my physical being, but emotionally as well. It's all "lazy, can't do it, don't want to..." all the time.
6. I used to dance. I used to run. I want who I used to be back.
7. I know what I need to do. I need to do it.
8. Feeling better about my body wouldn't hurt.
9. Ryan.
10. IVY.
The plan...
Cut out the sodas. Increase the H2O.
Up the protein and fresh fiber (fruit and veggies).
Decrease junk food and unhealthy snacking and processed foods.
Start off with 20 minutes of physical activity per day then work up to 30+ minutes of heart pumping physical activity.
This has worked before. At that time, I was participating in a job-sponsored "boot-camp" exercise program. I wish it were available to me now. And I know this isn't much of a plan right now, but it is a work in progress and will likely change as time goes on.
To date, I haven't had much soda at all (but I have had one yesterday and today). I've been trying to exercise, but it snowed recently and we aren't used to those kind of temperatures so I wasn't able to walk/jog. However, here is where my lazyness picks up... We have Wii-fit and Just Dance 2 so I know I can be inside and doing active things.
The real problem here is my lack of motivation. I don't really have anyone to keep me in line and to check in with.

Menu Plan Monday - Jan 10
I'm a little proud of my icon. I like being able to use icons like this on separate posts like on Livejournal. Oh well. To the point, shall we?
We were gifted a crock-pot for christmas this year from my mom. She wasn't sure we'd want it so it wasn't wrapped. We have had a couple of crock-pots in the past but never used them and just gave them away. This was at a point in our lives that we generally had more time on our hands to actually cook a meal on the stove. I made a soup or two in one, but I wasn't impressed and I do a mean soup on the stove anyway. Now with both of us working and having Ivy, we are either too forgetful to pull stuff out in the morning to thaw, too tired or busy to actually cook when we get home or just plain lazy or indecisive. Cooking takes planning. Does it ever!
I wasn't really sure what to make and I hadn't dug around on the internet yet to find any recipes. So my mom suggested pot roast. Okay. Grocery trip later and I had a roast, onions, carrots, red pepper and potatoes (we had the potatoes on hand already). About 5 days go by and we finally decide to do the crock-pot pot roast. I had to call my mom to actually get the dynamics of the whole thing. Here I am, 30 years old, growing up with a mom who religiously used a crock-pot, and I don't know what to do. There's no shame in that. It's just... strange to not know how to do this. I grew up in the kitchen for crying out loud.
The next morning, we have everything ready to go. Prepped the veggies the night before so all we had to do was throw it all together and go. Tried to put the frozen roast in the pot and it wouldn't fit. So I had to quick defrost in the microwave. Once everything was in order, we left for work. Upon arrival, the house smelled gooooooooooood. I was really excited about this!
Ryan made some rice in our new rice cooker. Perfect rice every time! The roast however, turned out mediocre. I forgot to season the darn thing before putting it in the pot. Simple fix though. It was pretty good.
Our following grocery trip, we got another roast. We are determined to get it right. We also got a pre-seasoned pork shoulder that was meant (and we made) for the crock pot. It was labeled as BBQ but smelled and tasted more tex-mex taco-y to me. So we slathered it with BBQ sauce and went on our merry way.
I'm foreseeing a lot of crock-pot use. At least once a week. Speaking of... it's a MENU PLAN MONDAY!!!
Monday: Leftover crock-pot BBQ pork. Er... we need some BBQ sauce STAT!
Tuesday: Possible round of more leftovers.
Wednesday: Skillet grilled chicken and rice of some sort
Thursday: Roast chicken and potatoes (crock-pot? or oven?)
Friday: Pizza
Saturday: Steak and baked potatoes
Sunday: Fried chicken and macaroni and cheese
We were gifted a crock-pot for christmas this year from my mom. She wasn't sure we'd want it so it wasn't wrapped. We have had a couple of crock-pots in the past but never used them and just gave them away. This was at a point in our lives that we generally had more time on our hands to actually cook a meal on the stove. I made a soup or two in one, but I wasn't impressed and I do a mean soup on the stove anyway. Now with both of us working and having Ivy, we are either too forgetful to pull stuff out in the morning to thaw, too tired or busy to actually cook when we get home or just plain lazy or indecisive. Cooking takes planning. Does it ever!

Merry Christmas...?
As you can very well tell, I don't update here that often. And today's topic is a bit on the late side. Oh well.
On Christmas Trees.
Growing up, I don't really remember our Christmas trees before 1990. I don't know why. But I do remember the ornaments. I'll get back to that. All I really remember is that my parents purchased an artificial tree one year and that's the only tree I remember. Except for when we lived with my aunt - but that's another story.
As my brother and I got older and spent less time at home, the tree was either replaced with a desk-top 12 inch artificial pipe-cleaner "tree" or we just didn't have one. I started dating Ryan and every year, we had a real tree. The year we started dating or the following christmas, Ryan surprised me with a 3 foot tree. Since then, we'd had a real tree in one of our bedrooms each year. Something I always longed for as a child (not in the bedroom but a real tree). Now I realize just how much of a pain in the booty a real tree is. Needles, watering the darned thing, sap, disposal, and the list goes on.
For a few years, we didn't get a tree because we didn't see the need in getting one to not even enjoy it because we spent christmas with family. Now that Ivy is here, we spend christmas at home. This is her second christmas. Last year, the tree was real. This year, oh-so-enjoyably-fake. And this tree, has a story. A short one, but one I can totally share.
I have a student who used to work at *major retail chain, name withheld*. He and his brother were working a graveyard and unloading the new stock of trees. The following morning, *major retail chain, name withheld*'s tree inventory was short a few. Student and brother decided to make some cash on the side. The trees were selling at $350. Student/brother combo were selling them for $80. Dude told me about this at the end of October. I filed that bit of info for my later use. Husband and I started talking about all the christmas plans right after Thanksgiving. The tree debate came up. I pulled my wildcard. Ryan flip-flopped with the idea. In the end, he said yes and the student dropped it off at the apartment at the beginning of December. We waited a few days to assemble and when we did, we were happy with the decision. Ornaments up, pretty tree, everyone's happy.
But the tree isn't what makes the story. Granted, my tree story is cool. But what really tells the story are the ornaments. Ornaments make my christmas. I get to pull them out and relive the stories, the years, the previous christmases, every year.
My mom packaged up all my childhood ornaments and gave them to me. The ones that I was gifted in elementary school. The ones I made at a Girl Scout holiday party, the free promotional ones my brother and I fought over. The metal one that my mom had engraved for me. Ryan doesn't really like these because my name is on them. I know what really "bothers" him though is that he doesn't have (as m)any ornaments with his name on them.
I also have a small collection of ornaments from my family's reunions. Some are hand-crafted. Some chronicle major family events. We have decorative ornaments that don't really tell a story. They're just ones that Ryan and I thought were pretty or we liked the color of (there's a mess of pink because it was my favorite color for some time).
Then there are ones that chronicle our life. The ones from our first christmas as newlyweds ("Our first..." and the Mickey/Minnie/"Just Married" one we got on our honeymoon). Ryan's fish collection. My ballet shoes. And then there are Ivy's ornaments. Her first christmas, pink baby things, gift box bobbles. My collection of winged creatures (birds and bugs) that I never realized I collected. Our topper is a star. Got it the year we moved away from Southeast Texas. The lights are a variety in color, shape and type. The skirt... I made it - even though in the pictures, it doesn't look good because it's all over the place.
I really love all the different ornaments. Nope, the tree isn't uniform. Nothing matches. But it sure is beautiful. And it tells our story. That's what matters to me.

And taking it down, I get to relive the stories again. My mom told me that it was bad luck to take the tree down before the New Year. Even though I'm not superstitious, I think I'll keep this tradition and take it down on new year's day. Ending the year with a story of our life, starting the new year remembering the story and then continuing it.
