Oh Yeah, Today is MPM

This week will be short and busy. We'll be heading back to our hometown for another week-ish on Friday or Saturday. While we are down there, I'll be taking my mom to Austin for a conference.

I've been doing pretty good on not paying full price for some things. We went to visit my brother-in-law and his girlfriend on Saturday. She took me shopping. I walked away with five things and only payed about 60-70 dollars. Not bad considering it was all from the mall and higher-end boutiques. Yeay! Then some purchases yesterday were all discounted. Soap, a portfolio and something else... I don't remember. Oh yeah, diapers!

So there it is. On to the menu... Keeping everything pretty simple.

Sunday - Roast chicken & vegetables (crock pot)
Monday - LO roast chicken & macaroni and cheese
Tuesday - Chicken pot pie
Wednesday - LO CPP
Thursday - Grilled pork chops, mac&cheese, mashed potatoes

Fill in the Blank Friday

Okay, I'm gonna do something new... It's called Fill in the Blank Friday via the little things we do.
Enjoy.

1.   The last thing I ate was... 1/2 a Sprinkles Key Lime Pie cupcake. Be jealous. Go ahead. I'll give you a moment. All better? Moving on.

2.  The next thing I'd like to eat is... I don't know. Surf & turf sounds good. So does a rootbeer float.

3.  The best things ... taste reeeeeeeaaaaalllllly good and are pretty expensive.

4.  Something that makes me supremely and utterly happy is... THING: food. Ain't gonna lie. Really good food makes me really happy.


5.  Sports are... nothing without the food. Take me out to the ballgame. Buy me some peanuts and cracker jacks. And an effing hotdog damnit.

6.  I miss... the way BBQ crabs tasted. Although, my last experience with them was pretty darn good.

7.  Right now I am... hiccuping. Why? WHYYYYY.


Okay, they started it with food. One track mind I tell ya.

Travel
What is your favorite way to travel (ship, plane, car, train, etc)? You name it, I love to travel. Boat (though I've only been on a ferry), plane (squee) and car.
Who is your favorite person to travel with? My family. Ryan has always been my travel partner (minus one time to Chicago). And now, Ivy!
What is the best vacation you've ever taken? Probably Orlando Florida for our honeymoon. I love Disneyworld.
Where will your next vacation be to? I don't know.
If you had the time and money to go anywhere you wanted, where would you go? EVERYWHERE

It's Good to be Home!

Okay... Last week, there wasn't a MPM because we went out of town to visit with family.

We don't have cable TV at home. We rely on Netflix and DVDs for shows and movies. We don't think cable is worth spending money on when we don't really spend much time watching it. But while we are visiting family, we watch tv. I just found a new tv show on TLC called Extreme Couponing. I've got to say that I am intrigued. People get hundreds of dollars of groceries for next to nothing. I just can't understand reasoning random products just because you can get them for free. If it's not something I'm going to use, I'm not going to free-buy it in mass quantities. So, this summer, I am going to try to start saving money by couponing. Not extreme though. I can even understand a small stockpile ... but I don't have the space for that. Wish me luck. Send me coupons ;).

We ate out quite a bit. But Ryan did make cheese and beef enchiladas and lime pie. Tasty! A second trip to Sake was eventful. When we walked in, we didn't see anyone. The place had just opened. We sat down at our table and I look at the sushi bar and I saw my uncle! He spent a lot of time in Korea so he really digs Asian food and really loves Sake. Ryan and I order and eat then Uncle J comes over and chats with us a bit. He had ordered us some soft shell crab so when it came out, I was a little iffy. But it tasted amazing. We can't wait to go back just so we can have that again.

I spent a weekend out at Crystal Beach with a friend whose family owns a beach cabin. They'd had one before the hurricane (Ike) and chose to rebuild. I stayed at the cabin before the hurricane and it was okay. After the rebuild though, that place is nice! Friday night, it was me, Jess and J. Saturday morning, J left and M showed up. Later Saturday, A & R showed up. There was much drinking, many jello shots, walks and cruising on the beach and my delicious food. I played cook - which is always fun for me. I kept myself slathered in SPF 50 but missed a few small spots - so red patches remain, but don't bother me. We really didn't do too much. It was very nice an relaxing. I only planned on staying one night but I hadn't been sleeping well and Ryan suggested I stay the second night. It was really nice to have some uninterrupted sleep.

We made it home yesterday afternoon and I'm starting some deep cleaning sessions. We haven't really unpacked everything yet, but it's getting there. I plan on doing laundry every day until I get caught up. Today, I deep cleaned the master bathroom. It was just horrible. But I reorganized, got rid of some junk and scrubbed every surface. I hope we can keep it clean. Tomorrow, I believe I'll work on the master bedroom. There isn't a great deal to do in there. Mostly dusting and straightening up.

Now that we are home, it's time to get meals in order. So, here we go with my Menu Plan Monday!

Sunday - Out of town

Monday - Chicken fettuccine alfredo (leftover frozen sauce from previous week)

Tuesday - Steak, twice baked potatoes, corn (the steak and potatoes are from some steak company)

Wednesday - Buffalo wings (Pioneer Woman's recipe), leftover corn, potato salad

Thursday - Pizza

Friday - Hamburgers

Saturday - Crock pot roast chicken and potatoes

No Menu Plan

Today, I would be posting a Menu Plan for the week. However, we are visiting family and so we have no plans. We've had sushi at a local place called Sake, sandwiches from Jason's Deli, and pizza from Papa Johns. We've also had tacos/burrito from another local place called Geo Burrito. I really want a burger from Hamburger Depot - also local.
 
I took Ivy shopping and to one of my cousin's little girl's 4th birthday party at a splash/fountain park (same one from last summer). Ivy was hesitant at first but then wanted independence and had so much fun. She hasn't been keen on taking her naps since Friday. Saturday, she went without and was so cranky. Yesterday, she wouldn't take a morning nap, but I got her down for an afternoon nap. Today, she's taking her morning nap while I'm writing this. Sleeping has been a challenge. She has been waking up crying so I have been rocking her and putting her in bed with me for a little while. Then I leave her in the crib and I move myself so she'll go back to sleep on her own. 

 Yeah, that's all I've got.

A Day In My Life

Tasks

So far, so good... Yesterday, I said I was going to do X, Y & Z. And I did all that.
Today, I did the same thing. Just a Z though. I cleaned out the car. Complete and total wipe-down and vacuum.

We also went to make an offer on a house. This house has 3 bedrooms, 2 full baths, an office, a formal dining room and a two car garage. The master has two small closets and one large closet, a vanity and the bathroom has a cool spa-like bath tub. It's an older house however, it has been updated (paint, a few new appliances, a wall (that created the office) and that fun bathroom. The bathrooms and kitchen are on the smaller side, but not completely cramped. The only living space that has carpeting are the bedrooms. And that's my preference - minimal carpeting. There's a fireplace in the living room and there's built in shelving next to it.

We would have to buy a refrigerator though, but that isn't a huge dilemma. The lot is pretty big, we'd have to buy a lawnmower which is also not a problem. Lowe's credit card in our future? Probably.

So I'm sitting here on hopes and dreams and I keep thinking of ways that Ryan and I will decorate things and what we'll plant in our yard. Mostly, I keep thinking of a small pool for me and Ivy to play in. I sure hope we get this house.

Classic Lasagna

So last week, I got it in my head that I wanted lasagna - trying to work with the food I have in my cupboards and fridge. This is the recipe I worked with when we made lasagna. We didn't have eggs, Italian sausage, fresh basil, onion or fennel seeds (I don't like those anyway). We did use dried oregano, rosemary and parsley. Instead of crushed and diced tomatoes, we used canned tomato sauce and paste. Our lasagna came out fine. Even Ivy had a few bites and wanted more (she had already eaten). But I know it will be better the next time we make it.

1          Pound ground round
3          Cup shredded part-skim mozzarella cheese, divided (3 cups = 12 oz)
2          Cup part skim ricotta cheese
1          Cup shredded Romano cheese, divide
2          eggs
3          clove garlic, minced
2          Tablespoon thinly sliced fresh basil
1/4       Cup chopped fresh flat leaf parsley, divided
1          can (28 oz each) crushed Tomatoes
1          can (14.5 oz each) diced Tomatoes with basil, garlic and oregano, undrained
1          medium onion, chopped
3          *serving PAM® Olive Oil No-Stick Cooking Spray
9          noodle uncooked lasagna noodles (about 8 ounces)
1/4       Teaspoon salt
1          Pound Italian pork sausage
1/2       Teaspoon fennel seeds
1/2       Teaspoon ground black pepper, divided

Preheat oven to 350°F. Cook lasagna noodles according to package directions. Drain and rinse with cool water to stop cooking. Meanwhile, spray large saucepan with cooking spray. Heat over medium-high heat until hot; add sausage and ground chuck. Cook and stir 5 minutes to crumble meat.

Add onion and garlic to pan. Continue cooking 8 to 10 minutes or until meat is no longer pink and onion is tender. Drain meat mixture well. Add crushed and undrained tomatoes, 1 tablespoon parsley, fennel seeds, 1/4 teaspoon pepper and salt. Bring meat mixture to a boil. Reduce heat; cook uncovered over medium-low heat 10 minutes, stirring occasionally.

Place ricotta, 3/4 cup of the Romano cheese, eggs, remaining parsley, basil and remaining pepper in medium bowl; blend well. Set aside.

Assemble Lasagna: Spray 13x9-inch glass baking dish with cooking spray. Spread 1 cup meat sauce evenly over bottom of dish. Place 3 lasagna noodles over sauce, top with 2 cups meat sauce, half of ricotta cheese mixture and 1 cup mozzarella cheese. Repeat layers ending with a layer of noodles topped with sauce and the remaining mozzarella and Romano cheeses.

Spray underside of aluminum foil with cooking spray; cover dish tightly with foil. Bake 45 minutes. Remove foil and bake another 15 minutes or until cheese melts and sauce is bubbling. Let stand 10 minutes before serving.

Our last day of teaching was Friday. The kids graduated yesterday (Saturday). The last two days of school were very relaxed. Culinary arts students handed out their cookbooks to the teachers, we had 'parties' and I finally cleaned out my office. Today begins the first official day of summer vacation. And it seems to be pretty busy: two family visits, three conferences, medical appointments, two birthdays, one anniversary, house hunting (hopeful purchase), hopeful garage sale and a partridge in a pear tree.

Today's agenda... flea market, groceries, laundry, cleaning (I need to find my master cleaning list) and preparing to pack (need to make a packing list) for our trip. I might take Ivy to the pool too.

We will be leaving to visit family on Friday. So there won't be a MPM for next week. Just this week.
